Chicken Pot Pie – A Classic Comfort Dish

A golden, flaky-crusted pie filled with tender chicken, creamy sauce, and hearty vegetables. The ultimate comfort dish that warms the soul and brings family and friends together around the table.

  1. Preheat oven 

    Preheat oven to 190°C (375°F)

  2. Cook vegetables

    In a large skillet, melt butter, sauté onion, carrots, celery, and garlic until softened (5–7 mins).

  3. Make the sauce

    Stir in flour and cook for 1 min. Gradually whisk in chicken broth and milk until smooth and thickened.

  4. Add filling

    Stir in cooked chicken, peas, thyme, salt, and pepper. Simmer for 5 mins, then remove from heat.

  5. Assemble pie

    Transfer filling into a baking dish. Cover with puff pastry sheet, trim edges, and crimp to seal. Cut small slits on top for steam.

  6. Egg wash

    Brush pastry with beaten egg for golden finish.

  7. Bake

    Bake for 40–45 mins until crust is golden brown.

  8. Rest & serve

    Let cool for 10 mins before serving.

Note

For extra flavor, add a splash of white wine to the sauce before baking. You can also substitute turkey for chicken, making this an excellent recipe for using up holiday leftovers. If you prefer a lighter version, use phyllo dough instead of puff pastry.
