In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold into the mascarpone mixture using a spatula, being careful not to deflate the mixture.

Mix the cooled coffee
In a shallow bowl, mix the cooled coffee with coffee liqueur (if using). Quickly dip each ladyfinger into the coffee—don’t soak them.

Layer the bottom of a rectangular dish
Layer the bottom of a rectangular dish (approx. 8x8 inches) with dipped ladyfingers.

Spread half of the mascarpone mixture
Spread half of the mascarpone mixture on top. Repeat with another layer of dipped ladyfingers, then the remaining cream.

Cover and refrigerate
Cover and refrigerate for at least 4 hours, preferably overnight.

Dust generously with cocoa powder just before serving.
