  1. Sauté the Aromatics

    Heat coconut oil in a deep pan over medium heat.
    Add onion and sauté until soft and golden (5–7 min). Add garlic and ginger, cook 1–2 more minutes.

  2. Spice It Up

    Add cumin, coriander, turmeric, chili flakes (if using), and garam masala. Stir continuously for 1 minute until fragrant.

  3. Add Tomatoes & Simmer

    Pour in diced tomatoes and cook for 5 minutes, stirring occasionally, until thickened slightly.

  4. Add Chickpeas & Coconut Milk

    Stir in the chickpeas and coconut milk. Reduce heat to low and let simmer for 15–20 minutes, stirring occasionally.

  5. Finish & Serve

    Add salt, pepper, and lime juice to taste.
    Serve hot over rice or with naan, garnished with chopped fresh cilantro.
